The ingredients needed to make Naked roast chicken:
  1. Prepare 4 chicken quarters
  2. You need 1/2 cup plus 1 tbsp unsalted butter
  3. You need 6 fresh sage leaves
  4. Provide 1 sprig fresh tarragon
  5. Use 2 cloves garlic, smashed
Steps to make Naked roast chicken:
  1. Season the chicken quarters with salt and leave them uncovered inside the fridge for at least 1 day, and up to 3 days.
  2. Preheat your oven to 475 F. Transfer the chicken to a tray. Melt the tbsp butter and brush it over the chicken. Sprinkle on a light dusting of salt. Put the chicken in the oven for 20 minutes.
