The ingredients needed to prepare Pumpkin Bread:
- Use 1 2/3 cup all-purpose flour
- Provide 1/3 cup light brown sugar
- Take 10 oz. canned pumpkin puree
- Provide 1 1/2 cup chopped toasted pecans or walnuts, optional
- Take 1 cup granulated sugar
- You need 1/2 tsp ground cloves
- Take 1 tsp ground cinnamon
- Take 1/2 tsp ground nutmeg

- Preheat oven to 325ºF.
- Spray one large loaf pan, about 9” x 5”, with cooking spray
- In a large bowl, mix together first seven ingredients
- In another bowl, blend the remaining ingredients together
- Combine all ingredients and stir well until smooth. (It is a thick batter!)
- Spoon into loaf pan and lightly smooth out the top with a spatula
- Bake about 1 hour and 15 minutes, until cake tester comes out dry and clean.
- Cool thoroughly. It’ll seem like the loaf doesn’t want to come out. Just give it a few good slaps on the bottom of the pan, and it’ll come right out.
Make a well in the centre of the dry ingredients and add in the eggs, coconut oil, honey, yoghurt and vanilla essence, and mix with a wooden spoon until combined. Add in the pureed pumpkin, mashed banana and nuts and combine with the wooden spoon. All you have to do is cut a small sugar pumpkin (or kabocha or butternut squash) in half horizontally and scrape out the seeds and stringy insides. Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.
