The ingredients needed to prepare Pumpkin bread:
- Get 200 g flour
- Use 500 g fresh pumpkin
- Take 1 tbs pumpkin spice
- You need 4 eggs
- Use 1/2 cup dried red dates (sheets)
- Take 1/2 cup pecans
- Use 3 raw walnuts
- Provide 1 1/2 tsp stevia
- Provide 1/2 tsp salt
- Prepare 1/2 tsp baking powder
- Take 100 ml flaxseed oil
Steps to make Pumpkin bread:
- Roast the pumpkin in the oven and purée in a blender, then set aside.
- Combine flour, pumpkin spice, salt, stevia and baking powder; mix thoroughly in a bowl.
- Beat eggs with the oil until it’s foamy and combine with the dry ingredients mixture, mix or stir batter to a smooth consistency. Add the pumpkin purée, red dates and stir properly.
- Scoop the batter into a greased loaf pan, top with the cracked walnuts and pecans, bake on a preheated oven at 180 degrees for 55 minutes. Allow to cool properly before removing from the pan.
Make a well in the centre of the dry ingredients and add in the eggs, coconut oil, honey, yoghurt and vanilla essence, and mix with a wooden spoon until combined. Add in the pureed pumpkin, mashed banana and nuts and combine with the wooden spoon. All you have to do is cut a small sugar pumpkin (or kabocha or butternut squash) in half horizontally and scrape out the seeds and stringy insides. Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.
