The ingredients needed to make Fresh Pasta:
  1. Prepare 250 g 00 (Pasta) Flour
  2. Provide 2 free-range eggs
  3. Provide 1 tablespoon Extra virgin olive oil
  4. Prepare 1 litre water to boil pasta
  5. Prepare 1 pinch sea salt
Steps to make Fresh Pasta:
  1. On a clean surface, tip out the flour and make a well in the middle of the flour, add the eggs and slowly beat to incorporate.
  2. Adding more flour little by little to form a dough. Knead for 5 minutes then set aside in clingfilm in the fridge to prove for 30 minutes.
  3. Using either a pasta machine or a rolling pin, roll out the pasta to desired thickness (about 2mm thick) which is quite thin, cut into long strips or use a spaghetti or tagliatelle attachment.
