The ingredients needed to prepare Meringue Cookies:
- Take 4 egg whites
- You need 1 pinch salt
- You need 1 tsp vanilla essence
- Get 1 cup castor sugar
- Use 125 g choc chips
- Get 200 g chopped pecans
Instructions to make Meringue Cookies:
- Preheat oven to 140°and line a baking sheet or 2 with baking paper.
- Drop Beat egg whites till frothy, add salt and keep beating till stiff peaks form.

- Gently fold in choc chips and pecans

I like to add a few other ingredients as well, such as cream of tartar to make the meringue more stable, vanilla extract, and salt to balance the flavors. Line a baking tray with baking paper. In large bowl, beat egg whites until stiff, but not dry. Gradually beat in sugar until a little of the mixture between your thumb and forefinger feels smooth, not gritty.
