  1. Use 9 Rice Paper
  2. You need 12 crab sticks, cooked and shredded
  3. Provide 1 cucumber, seeded and sliced into thin strips
  4. Get 18 green ice lettuce leaves
  5. Use 3 tbsp Japanese mayonnaise
  6. You need 1 mango, sliced into thin strips
  7. Take Pinch salt
  8. Take Peanut Sauce:
  9. Use 2 tbsp peanut butter
  10. You need 1/2 tbsp apple cider vinegar
  11. Take 1/2 tbsp soy sauce
  12. Use 1/2 tbsp honey
  13. Take 1/2 tbsp sesame oil
  14. Get 1/2 tbsp garlic, minced
  15. Prepare 3 tbsp hot water
Steps to make Kani Mango Roll:
  1. Combine crab sticks and mayonnaise in a bowl. Season it with salt. Set aside
  2. Dip a piece of rice paper in a big bowl of water to soften it. Lay the softened wrapper on a clean chopping board.
  3. Line 2 lettuce leaves on the rice paper. Add 2 spoonful of crab mixture on top of the lettuce leaves. Arrange 2 cucumber sticks and top with 2 mango slices.
  4. Fold it on both side to seal each ends and roll the rice paper tightly to secure the filling. Slice it the center. Repeat to make a total of 9 rolls.
  5. For Peanut Sauce, combine all the ingredients and mix it until the sauce is thick.
