- Provide 1.5 cup pasta (any type of pasta can be used)
- Take 1.5 cup chopped vegetables of own choice (I used carrot, broccoli, onion & peas. Peas aren't needed to be chopped)
- Take 2 cups spinach
- You need 1/2 tbsp chopped garlic
- Provide 2 tbsp garlic butter
- You need 1/2 tsp vegetable oil
- You need 2.5 tbsp flour
- Provide 2 cups milk
- Use 2 cubes processed cheese
- Prepare 2.5 tsp black pepper powder
- Provide 2 tsp dried oregano
- Take as per taste salt
- Prepare 1/2 tsp sugar
- Provide some fresh springs of coriander leaves for garnishing (optional)

- Get 2 cups small boneless chicken cubes
- Take 1/2 tbsp ginger paste
- Prepare 1 tbsp garlic paste
- Use 2 tsp piri piri spice powder
- You need 1.5 tsp black pepper powder

- Take 1/2 tsp + 1 tsp vegetable oil (for marination)
- Get 1.5 tsp vegetable oil (for brushing the chicken during baking)
- Use 1 tsp garlic butter
- You need 2 eggs
- Use 1/3 cup flour
- Take 1/3 cup cornflour
- Prepare 1.5 cup breadcrumbs
Instructions to make Spinach Pasta with Baked Chicken Nuggets:
- Heat a good amount of water with good amount of salt & vegetable oil in a heavy bottomed pan until the pasta is al dente.
- Then drain the water & rinse the pasta with cold water. Keep it aside
- For making nuggets take the chicken pieces into a large bowl and add the ginger paste, garlic paste, piri piri spice powder, black pepper powder, salt & oil into it
- Mix everything very well & let the chicken be marinated for 10 minutes
- In the mean time preheat the microwave in convection mode at 200°C for 10 minutes
- Now let's move on to the preparation of pasta. Put the spinach in boiling water just for few seconds & then drain the water from the spinach and make a paste out of it. Spinach paste should be very smooth. Keep it aside
- Again move on to the nuggets now. Mix the flour and cornflour into a large plate & add some salt into the mixture
- Break the eggs into a bowl & mix a very little amount of salt into it
- Spread the breadcrumbs into a large plate
- Now take one chicken piece at a time, dredge it into the flour mixture, then dip into the egg & finally coat it with breadcrumbs
- Repeat the same for all the chicken pieces
- For pan searing the chicken pieces heat the butter and oil into a pan & add the chicken pieces into it
- Saute them for 4-5 minutes until they are light golden brown
- Now arrange the chicken pieces onto a baking tray
- Put the tray into the preheated microwave & bake the chicken in convection mode at 180°C for 18 minutes
- Remove the tray once in between & brush each of the chicken pieces with oil
- While chicken is cooking let's move on to the pasta now. For that boil the broccoli & peas in hot water for a couple of minutes and then drain the water. Then rinse the broccoli and peas with cold water
- Heat the butter and oil into a pan & add the chopped garlic into it
- Saute for few seconds & then add all the vegetables
- Saute for few minutes & then add the spinach paste
- Cook until the mixture in the pan becomes little dry
- Now sprinkle the flour & cook for about 1.5 minutes on medium flame
- Now increase the flame & add the milk
- Stir vigorously to prevent any lump formation as soon the mixture starts to thicken add the salt, sugar & black pepper powder
- Mix well & now grate the cheese cubes into the pan
- Mix everything well and now add the pasta
- Mix the pasta very gently with all the other ingredients into the pan
- Lastly mix the oregano & turn off the flame
- In the mean chicken should be thoroughly baked & ready to be served with the pasta
- For serving the pasta take few serving bowls and divide the pasta in equal amount in each bowl
- Put few chicken nuggets on top of the pasta in each bowl & finally garnish it with a fresh spring of coriander leaves
