  4. Prepare 8-10 curry leaves

  7. Get 1 tbsp vinegar
  8. Use 1 tbsp oil

Steps to make Beetroot pickle:
  1. In a pan add oil and mustard seeds. Once splutters add Fenugreek powder and asafoetida.
  2. Add ginger garlic curry leaves and saute it for a while.
  3. Add salt and chilli powder.
  4. Add beetroot and stir it. Add sugar to it.
  5. Add 1/2 cup water and cook until water burns.
  6. Add vinegar and mix it well.
  7. Beetroot pickle is ready to serve. Best with pongal or khichdi.

Cook the beetroot in boiling water, then peel and slice or dice and pack into sterilised jars. Combine remaining ingredients in a large saucepan. Bring to the boil, then remove from the heat.
