- Use 1 beetroot julians
- Get 1 inch ginger
- Get 3-4 garlic clove
- Prepare 8-10 curry leaves
- Take 1 green chilli chopped
- You need 1 tbsp sugar
- Get 1 tbsp vinegar
- Use 1 tbsp oil
- Get 1 tsp mustard seeds

- In a pan add oil and mustard seeds. Once splutters add Fenugreek powder and asafoetida.
- Add ginger garlic curry leaves and saute it for a while.
- Add salt and chilli powder.
- Add beetroot and stir it. Add sugar to it.
- Add 1/2 cup water and cook until water burns.
- Add vinegar and mix it well.
- Beetroot pickle is ready to serve. Best with pongal or khichdi.
