The ingredients needed to make Braided Samosas:
- Use For dough
- Use 1/2 cup maida
- You need 1 pinch baking powder
- Get 1 tsp ajwain
- You need to taste Salt
- Get 3 tsp oil
- Provide For filling-
- Get 1 boiled potato
- Take 1/2 capsicum chopped
- Provide 1/2 onion chopped
- Provide few Curry leaves
- Take Few green chillies
- Provide as required Salt and coriander leaves
- Prepare As per taste Chaat masala/ Jaljeera powder
Steps to make Braided Samosas:
- Take maida in a bowl, add some ajwain, salt, 3 tsp of oil and knead it into a stiff dough. Cover it with a damp cloth and keep it aside for about half an hour.
- Now for the filling, you can add any aloo filling of your choice. But for my filling, heat a pan. Add 2 tsp oil in it, add some mustard seeds, curry leaves, green chilli & chopped onion, chopped capsicum into it and fry it for some time. Now add the boiled, mashed potatoes and give it a mix and cook it for about 5 mins. Add half tsp chaat masala/ jaljeera powder, add some coriander leaves & give it a mix. Keep it aside.
- Now take the dough. Again Knead it for about 5 mins. Make 3 balls out of it. Roll it into a very thin chapati and cut into rectangular shape as in pic 1.
- Now make the designs as shown in the pics. Place the filling and seal it with water. Now roll it. It will form the shape as shown in image 3. Seal it properly. Make the remaining one in the same way.
- Now heat oil in a kadhai and fry them in a low flame to make them crispy. Serve hot with ketchup or as it is.
Beat the egg and water in a small bowl with a fork. Divide the potato mixture among the pastry squares. Brush the edges of the pastry squares with the egg mixture. And while traditional dough is the best, I don't always have the patience to make it. Sometime you just need a samosa and you need it fast!
